Preparation:

Cook unpeeled beetroot until tender. Or bake it in the oven wrapped in tin foil for at least an hour. It is ready when a fork goes into it easily. Peel the cooked beets and cut them into thin slices. Place the slices on the cookies, crackers, or crostini. Layer a piece of cheese on it, sprinkle with drops of balsamic vinegar and decorate it with rocket and nuts. Zucchini Stuffed with Spelt, Mushrooms and Mature Goat Cheese

25 minutes 20 minutes 3 servings Goat/Sheep/Cow milk

Ingredients:

  • 100 g Spelt (soak for at least 10 hours)
  • 300 ml vegetable stock
  • 2 medium zucchini (cut lengthwise and hollowed-out)
  • 2Tbs butter
  • 1Tbs olive oil
  • 200 g brown mushrooms, sliced
  • 1 smaller leek, sliced ​​into rings
  • a handful of roughly chopped almonds
  • 1 stalk celery, finely chopped
  • Himalayan salt
  • four-color pepper
  • pinch of freshly ground nutmeg
  • ¼ tsp dried lemon peel
  • 50 grams of 6 month old goat cheese, finely grated

Preparation:

Soak spelt in water for at least 10 hours to swell. Bring vegetable broth to boil and add drained spelt, cook it over low heat for about 15-20 minutes until tender. Drain any excess broth. Place zucchini on a baking paper, sprinkle with salt and pepper and bake in the oven at 200 degrees for about 10 minutes. In a pan warm the butter with oil and saute mushrooms with leek, celery, stir in almonds. Season with salt and pepper, add the nutmeg and lemon zest. Stir cooked spelt into the mixture and fill the zucchini. Lower the temperature in the oven to 170 degrees, and bake the zucchini for about 10 minutes. Grate goat's cheese on the baked zucchini and your delicacy is ready!

Ingredients

  • 1 cup (250 ml) tri-color quinoa
  • 2 cups of boiling vegetable stock
  • 2Tbs olive oil
  • 125 g fresh spinach
  • 100g of fresh goat cheese with wild garlic
  • 3 handfuls of frozen green beans
  • a handful of finely chopped dried tomatoes
  • Himalayan salt
  • black pepper

Dressing

  • 1Tbs olive oil
  • 1tsp honey
  • 1tsp soy sauce
  • juice from half a lemon
  • Himalayan salt
  • black pepper

Preparation:

Put quinoa into the boiling broth, simmer 15 minutes, remove, and let stand covered with lid for 10 minutes. Fluff it with a fork. Pour some oil into a frying pan and fry beans, season with salt and pepper, pour about 50 ml broth and cover it with a lid and leave for 10 minutes on low heat. When finished, add spinach and let it wilt. Pour the dressing on it, which is mixed into creamy consistency. Stir in quinoa and dried tomatoes. Put it on a plate, add the pieces of cheese and have a treat! :)

Spring Salad with Strawberries

20 minutes 15 minutes 3 servings

Ingredients

  • 3Tbs olive oil
  • 2Tbs balsamic vinegar
  • 1Tbs date syrup
  • 100 g baby spinach
  • 100 g arugula
  • 150 g of white grapes (the best is sliced in half)
  • 150 g strawberries (the best are cut into quarters)
  • 150 g goat cheese for grilling
  • 2 handfuls of sunflower seeds, dry roasted in a pan
  • 1 vanilla pod (use only seeds)

Preparation:

Whip olive oil, balsamic vinegar, date syrup, and vanilla in a large bowl with a fork until creamy. Then add washed baby spinach, rocket, grapes and strawberries. Stir everything together. Serve with grilled goat cheese and sprinkled with sunflower seeds.
